Honey Ginger Roasted Carrots
I made these carrots last fall and I thought that I'd share the recipe. I actually don't like carrots too much, and I am allergic to ginger a bit. But I can eat these carrots with no problem, they are delicious.
Ingredients
1 pound carrots
1/4 cup honey
1/4 cup olive oil
2 teaspoons ginger paste
1 tablespoon soy sauce
2 cloves garlic, minced
1 tablespoon brown sugar
Sesame seeds
Instructions
Preheat oven to 350 degrees. Line a baking sheet with foil and spray with non-stick cooking spray. Whisk honey, olive oil, ginger paste, soy sauce, garlic and brown sugar.
Pour glaze over carrots on the foil lined pan, then sprinkle with sesame seeds.
Bake for 20-25 minutes, use a tongs to flip the carrots after 10 minutes or so.
Leave in the oven until carrots are soft and tender.
